Can I watch Fate/Zero first?
The author of Fate/Zero has said on several occasions that Stay Night should be read first. Fate Zero, far better viewing experience if you’re not bothering with any of the VN stuff. Plus trying to watching FSN on its own without any context is horrendous.

Is fate/zero good in Dub?
The dub is good as it is. The voice actors/actresses aren’t by any means bad. I wouldn’t really compare them to the Japanese cast though, as that would be unfair and we all know everyone here is biased towards subs (ok, most people).

Emiya Kiritsugu is the main Fate/Zero character and Saber’s master. For a protagonist though, Emiya is quite odd. He’s actually very dark and ruthless. Emiya prioritizes the Holy Grail above everything else, which means he can resort to deceitful and mischievous actions in order to eliminate his enemies.
What is Fate Zero about?
Fate/zero is a story about adults engaged in war so it has a maturity that the story it prequels lacks. Fate/stay night is a story about teenagers pretending to fight a war while adults fight it behind the scenes.
